Easy, Quick Crab Cakes

This recipe for fast, easy crab cakes will make dinner special even on the weeknights!

I’m all about easy, fast dinners.  You probably already know that by my instant pot love confessions!  However, I occasionally do cook without the use of my gadgets.  

My favorite cookbook is a Betty Crocker cookbook I’ve had for 17 years.  My best friend’s momma got it for me along with a fire extinguisher when I got married!  This cookbook’s pages are starting to be a little yellowed and there are post-it notes and inserted written recipes all throughout.  

The one thing I have made from it for all 17 years are the crab cakes.  They are really hard to mess up!  They are so simple, and fast!  You can also mix it up and pat out the crab cakes beforehand or on a Sunday meal prep so when you get home all you have to do is throw them in the skillet!  

Easy Crab Cake Recipe

The List of Ingredients

1/4 cup on mayonnaise or salad dressing  (I’m just gonna be honest here.  I totally use Miracle Whip.  It’s an Eastern KY staple.)

1 large egg

1 1/4 cups of soft bread crumbs (about 2 slices of bread)  I just tear the bread up into big chunks with my hands and don’t bother getting these ground up.

1 teaspoon of ground mustard

1/4 teaspoon salt

1/8 teaspoon pepper

2 medium green onions, chopped (2 tablespoons)  I actually omit these.  I don’t care for the green onions – if you want an onion flavor you could always sprinkle in some onion powder.

2 cans (6 ounces each) crabmeat, drained

2 tablespoons of vegetable oil

1/4 cup dry bread crumbs (I actually buy bread crumbs that already have Italian season mixed in it.)

Directions

Mix the mayonnaise (er, or Miracle Whip) and the egg together.  Stir in the remaining ingredients except for oil and dry bread crumbs.  Shape mixture into 6 patties.

Coat each patty with the dry bread crumbs.

Heat the oil in a 12-inch skillet over medium heat.  Cook in oil over medium heat for about 10 minutes, turning over once, until golden brown and hot in the center.  

Enjoy!  

What do you serve with your crab cakes?

I usually serve these with a nice roasted vegetable.  

Other things you can serve crab cakes with:

  • a great dipping sauce such as a red pepper sauce
  • coleslaw
  • corn on the cob
  • salad
  • grilled vegetables, such as zucchini or squash
