I’ve mentioned before that my son LOVES eggs. He likes them any way that you can make them! Scrambled eggs are right there at the top of the list.
I feel like I am an expert egg maker at this point! Scrambled eggs are an easy, fast way to make an egg, as long as you follow a few of these tips! Pretty soon you’ll know how to make fluffy scrambled eggs just like ihop!
Getting Your Pan Ready for Scrambled Eggs
Go ahead and start melting some butter in your non-stick pan on low heat.
The non-stick pan is a key part of scrambled eggs. This is the best pan to use for the job!
Don’t use a ton of butter, just enough to coat your pan. I’d say I use about 2 tablespoons in my pan.

Whisking Scrambled Eggs – With or Without Milk?
Whisk your eggs together. Whisking adds volume and air to your eggs.
You do not need to add milk – the whisking alone has added the volume and air as I mentioned earlier. Milk can dilute the egg flavor and make it rubbery.
You can also add some salt and pepper at this point. Don’t oversalt – you can add more again at the end if it’s needed.
The whisking of the eggs right before adding them to the pan is really the key to fluffy scrambled eggs!

Once you have your whisked eggs in your pan with the melted butter, you need to continue to whisk. (Be sure to use a silicone covered whisk in your non-stick pan, so you don’t scratch it!)
Avoid Overcooked Scrambled Eggs
Also, be sure to continue whisking the eggs over low heat! Don’t turn that heat up or you will have overcooked dry eggs.

As you are whisking, the eggs will start pulling together into beautiful soft curds. Really start paying attention as the eggs will cook quickly now.

Once you get your scrambled eggs to your desired wetness, turn the heat off and immediately transfer them from the pan to serve!
I hope this gives the beginner scrambled egg maker some courage!
Making the perfect scrambled eggs is easy, as long you whisk them well, use low heat, and pay close attention to them!
