These Halloween themed peanut butter balls that look like eyeballs are sure to be a great treat for your kids! It’s easy to get them involved in the kitchen while making them too!
My son loves being my “sous chef” and these Halloween treats proved to be a great opportunity for him to help me out in the kitchen. He got such a kick out of helping with these!
They are simply peanut butter balls dipped in white chocolate with a candy eye pressed in them!
To make them, start with making your peanut butter balls.
The cast of characters is unsalted butter, peanut butter, confectionary sugar, white chocolate, and candy eyes. (I found my candy eyes at Kroger in the cupcake/cake decorating section, so they shouldn’t be too hard to find. You can also find them on Amazon!)
You will mix 1 cup of peanut butter and 6 tablespoons of (softened) butter together. I find this easiest to do with my Kitchenaid mixer and the paddle attachment.
Then, you slowly add in two cups of confectionary sugar. Add a pinch of salt (Or, if you don’t want to add salt, just use salted butter instead of the unsalted.) You will add the sugar until it gets to the right consistency.
Use your own judgment: if it seems a little too soft, add a little more sugar, and if it seems to be getting too dried out, stop adding the sugar! You will know the right consistency when it rolls easily without crumbling in your fingers!!
I put them in the refrigerator to let them firm up after I’ve rolled them.
While they are firming up, go ahead and melt your white chocolate for dipping. I used the chocolate melting wafers because they are perfect and easy to melt.
As I dip them, I place them on parchment (or aluminum foil if you are out of parchment as I was that day) and let my son press in the candy eye to stick to the chocolate as it dries.
You can easily change these up too! Let them use a food marker to give the eyes red streaks! Or dip in green chocolate melts for a monster eye! Your imagination is the only limit!
Once the candy is firmed up, serve! I keep mine in the refrigerator for storage.
