I continue to marvel at the many amazing things my instant pot can do. It really isn’t limited to basic meals or soups (although those are great too).
One of the most magical tricks I have found my pressure cooker capable of performing is turning a simple can of sweetened condensed milk into thick, delicious Dulce de Leche!
Dulce de Leche Instant Pot Recipe
Start by taking the label off your can of sweetened condensed milk. Then, take off your lid. (I always manage to take the lid off first and then have to juggle the label off without spilling the condensed milk – I can’t help myself, I get so excited about the magic about to happen!)
Cover tightly with foil.

I was slightly overambitious with my foil, but you get the drift here!
Next, sit it down on your trivet and pour enough water in to come up the sides of the can. (About the middle of the can.) Use caution not to pour the water directly down upon your covered can.

Once it’s on the trivet, you add water until it hits the side of the can (about mid-can).
Now, place the lid on – put it to sealing and place it on manual pressure for 40 minutes. (Be sure your sealing ring is in place.)

Once the instant pot is finished, let it natural release completely.
Go ahead and pull it out, but caution as it is VERY hot. Let cool. A bit of a warning here: It might look really weird or even gross. There may be a little bit of residual condensation that settled on the top. Have faith.
Now, once it’s cooled, add 1 teaspoon of vanilla. The vanilla is not mandatory – you can use it without this addition. I just happen to like the elevation of flavor the vanilla gives it. You can add this directly to the can and stir, but I find that a very good way to make a mess. I dumped mine out into a mixing bowl and added the vanilla.
You are going to have to stir pretty vigorously to get out the lumps. It’s going to look VERY lumpy at first. Don’t be scared. The first time I made it I doubted if it was ever going to look right because of how lumpy it was! Just stir, stir, stir until it’s not lumpy and is nice and smooth!

It is lumpy, but have faith! Mix well and it’ll be beautifully smooth.
Next, store it in your refrigerator until you use it! It will last for a month in an airtight container.
How to Eat Dulce de Leche
There really isn’t a wrong way to eat or use Dulce de Leche. You can eat it plain (Uhm, guilty!). You can pour it on your ice cream as a topping. Dip your apple slices in it. Pour it on your cheesecakes. Use it as a cookie sandwich filling. The list is endless, really!
