I enjoy trying new foods. This was not always the case. I used to only want kid-like foods – pizza, chicken nuggets, french fries… you get the idea. However, once I started learning to cook and traveling, my tastes changed dramatically. I also learned that if I didn’t like a certain food, if I would retry that food cooked differently or by a chef who really knew what they were doing, I’d end up changing my mind.
When we were going on the Disney Fantasy, I knew immediately I wanted to try one of their 18+ fine dining experiences. It’s perfect for the adults who never get date nights because you can check your kids into the kids club. I had heard some amazing things about both the Remy and Palo brunches, though both drastically different.

I ended up choosing the Remy champagne brunch, not because it was the highest on my list, but because Palo brunch was simply sold out. I even almost canceled it a few times after reading the types of food served – going back to my picky palate and concern I wouldn’t eat it. However, I kept telling myself it was worth trying and was I glad I did.
Remy Dress Code
Remy has a strict dress code that they follow, and they differ for the different meals.
During brunch: For men, it is slack and a collared shirt. There is no jacket or tie requirement, however. Men also may not wear open-toed shoes, tennis shoes, or sandals/flip-flops. For women, it’s a dress or pantsuit.
My husband wore a collared shirt and a jacket, along with khakis and loafers. I wore a nice dress I got from Nordstrom and some fancy sandals.

Arriving at Remy for Brunch
Our reservations for the Remy Champagne Brunch were at 12:10. We showed up just a few minutes early, so they had us sit in the Meridian lounge as we waited. We could have ordered drinks if we wanted, but we weren’t super early and I also didn’t want to drink a lot since I knew I was having champagne paired with my courses.
(Keep in mind, the champagne pairing is an additional uncharge. But, it’s worth it!!)
Intro to the Champagne Brunch
Once our time arrived, they came and got us along with other couples who had reservations. There were 5-6 couples in total. We all were taking into the wine room where we were met with our chef and sommelier.
We were served champagne and a treat of a delicious prosciutto ham shaped into a rose.

The chef spoke about the food we would soon be eating, discussing how it was made even down to why the wheat for the bread was tastier due to its harvest. The sommelier discussed the champagne we would be enjoying with each course.
This part was interesting, but we all had to stand. They had some tables near us to sit our food or drinks on. Normally, this wouldn’t have been a problem, but our ship was encountering some rough seas. Due to this, I was so focused on keeping my footing, I was having difficulty enjoying or paying attention. I think I’d prefer for them to have a large group table to sit around. (As you’ll notice, the only picture I have of this group introduction is a poor quality picture of our rose-shaped prosciutto as it was impossible for me to juggle everything, keep my footing, AND take pictures.)

Remy Champagne Brunch Courses
Once this group introduction was over, we were all individually escorted to our tables. My husband and I were seated right next to the window and we had a beautiful view overlooking the ocean.

Our waiter greeted us immediately, and we were started with bread, butter, coarse sea salt, and our first champagne.

The bread was truly amazing, and our butter was stamped with a gold “R” for Remy. Definitely add the sea salt to the top of your buttered bread.

We were started with the first course – listed as asparagus/egg. It was asparagus, egg yolk, and caviar – with a champagne cream sauce. I have never had caviar and was a bit unsure of this dish. However, it was AMAZING. I love asparagus anyway, and this was perfect. A truly light and elegant dish.

The second course was tortellini. The tortellini was stuffed with ham and served with another champagne based sauce. The foam on the top of the tortellini was a gorgeous touch.

The next course was a mousse – made of scallops. Now, I normally do not eat scallops, but willing to try them again. I ate about 1/3 of it. It was not horrible, but if you don’t like scallops, you wouldn’t love this dish. I was totally fine with not being able to eat this, even told my waiter it wasn’t the food but my taste buds.
Next thing I know, the chef has personally brought me out a risotto topped with bacon as a substitute. They also brought one for my husband even though he had eaten all of his dish. I was so delighted with this risotto, I failed to take a picture of it. It was the best risotto I’ve ever eaten in my life.

Next, what you might consider our main course was served. It was chicken, stuffed with a cornbread mix and spinach balls. It was very Thanksgiving like. While it tasted wonderful, it was likely the least impressive of the meal as far as innovation, beauty, and technique.

Before we started our dessert, they brought out a bottle of champagne that is designed to be served over ice. This Moet & Chandon Ice Imperial champagne was delightful!
Our dessert was a Rum Baba. This dessert was even lighter in your mouth than it appeared. Beautiful dessert.

Once we were done with our dessert, we weren’t really done yet! They brought out a tray of tiny little pastries. I do not recall the name of these pastries and they were not listed on the menu.
However, I found these to be my least favorite. I felt they were a little dry. I have read other people mention they bundled them up for them to take back with them, but they didn’t offer and I didn’t ask since I wasn’t particularly in love with them.
To sum it up, the Remy Champagne Brunch was beyond my expectations. We were so full when we left that we were almost too full for our second seating dinner! For such small plates, we were overly full! Other than the scallops, I loved every single dish. The dishes were beautiful and my pictures don’t begin to do them justice. I would highly recommend you try the Remy brunch – and pair it with the champagne!
