Two Bananas Bread Recipe

This is a delicious banana bread recipe that only needs two overripe bananas!

It never fails that when I want to make banana bread, I only have two bananas left.  There is a physics law written around the number of browning bananas I have at any given time, I swear it.  A lot of the banana bread recipes I have found call for three bananas!  I finally have pieced together a recipe that only requires two bananas!

Two Bananas Bread Recipe

Ingredients for Two Bananas Bread Recipe

3/4 cup sugar

1/2 cup butter, softened

2 large eggs

2 (1 cup) ripe bananas, mashed

1/2 teaspoon vanilla

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon ground cinnamon

How to Make Two Bananas Bread

Heat oven to 350°F. Prepare your 8×4-inch loaf pan.

I also like to keep disposable loaf pans on hand so that I can gift my bread as well.  They make great housewarming presents, holiday presents for your neighbors, and teacher gifts.

You can butter and flour these, but you can save time and spray it with Pam cooking spray and it will work out just fine.  (If you haven’t learned anything about me yet, just know that I’m all about getting things done as fast as possible.)

Combine sugar, butter, and eggs in a bowl. Beat at medium speed, scraping bowl often, until creamy.

I usually mash my bananas up really well with a fork before adding them to the mix.  Add bananas and vanilla and beat at low speed until well-mixed. Stir in all remaining ingredients.

Spoon batter into prepared pan. Bake 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes; remove from pan to cooling rack. Cool completely.  

Now, I’ll be honest.  We ignore this cool completely part of the recipe at my house.  We get it out nice and warm and smear butter or jam on it.

    This recipe is very easy and delicious!! The only problem is the bake time. Recipe says 60-70 minutes and that is way too long unless you like burnt bread. I checked mine after 40 minutes and it was done. I will check after 35 minutes next time because the edges were very dark. I am giving 5 stars because I realize all ovens heat differently.

      Linda that’s awesome you enjoyed it!!! Just curious what kind of oven you have? I have a gas oven. Yes ovens are very different!! I may make a little edit for people to check earlier!!

        I also have a gas oven! Not sure why mine was done so much earlier than the time stated. The bread will not last long..it’s half gone already!!! Thank you for a great recipe!! 🙂
